I edited the original to include protein powder and vanilla extract. I also reduced the salt a little and increased the water as the protein powder necessitates more water in the batter.
Essentially, you need to add just enough water until it has a normal pancake batter consistency - thick and a bit liquidy.
- 1 ¼ cups all-purpose flour
- 2 tablespoons white sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup unflavored pea protein powder
- 1 1/5-2 cups water
- 1 tablespoon oil
- 1/4-1/2 teaspoon vanilla extract
Mix all dry ingredients together and try remove lumps from the protein powder and flour.
Add the wet ingredients. Mix well. Some lumps are okay.
Put about a tablespoon of oil in the pan and spread it out with a spatula.
Drop batter by large spoonfuls onto the griddle. Cook until bubbles form and edges are dry. Flip, then cook until bottoms are browned, 1 to 2 minutes. Repeat with remaining batter.Return to Vegan Recipes
